Spring is just barely on it’s way here in northern Norway, with 60 cm (2 ft) of snow over the weekend slowing down the progress to almost a complete stop. We call it thawing snow… The snow that falls at the end of April, usually on top of snow that has started melting, with the result that the melting process goes faster. 60 cm is just too much on top of the 60 cm that was already there! Soon though, I will be able to enjoy a roadside lunch like this one. Soon.
